Slovenia, my country, has two distinct specialties which I am extremely proud of. It is small, so you can quickly get from one side of the country to another, and on the way in between you can do a lot of fun things or you stop for visiting friends. This beautiful land of ours is also distinguished by its extraordinary diversity; geographical and natural. It is a real natural pearl where you can admire the hilly central part; you travel across the vast Pannonian plains in the east; dive into the Adriatic Sea in the southwest, yes, right where you feel the splash of the Mediterranean; explore the Alps and the Alpine valleys in the northwest; relax in the mighty forests of the south; or you explore karst caves and cultivated hills that lie in the west of Slovenia. Beautiful and preserved nature here can be found everywhere. It’s kind of the same with food. In every part of Slovenia the culinary is its own gastronomic experience. Strongly connected to nature, with ingredients from the local environment and with the locals who live and breathe with the area.
When you say you want to taste Slovenian cuisine, then it means that you are really looking for the taste of nature: to taste Slovenia is to taste nature! Slovenian cuisine is based on genuine contact with everything local, at least the authentic, delicious, with a full range of ingredients from the local-natural environment. Gastronomy in the countryside where people are close to ingredients from nature that offer special flavors, is the finest. Believe me, you will experience the most authentic flavors right on the outskirts of the village, where the path to the plantation, meadow, forest and garden is at your fingertips.
Slovenian cuisine is based on specialties. This was significantly influenced by the period of Yugoslavia, when people had their own gardens for seasonal ingredients. They were popularly called »gardeners«. This has been partially preserved to this day, as many people grow their own seasonal vegetables, spices and fruits. It’s basically a simple way to grow their own food according to the principle: »field to fork«. Modern Slovenian gastronomy works in a similar way. Restaurants and inns, which understand the importance of high quality ingredients, seek for those obtained in the local environment; by farmers, vegetable growers, on alpine pastures or plantations… That is why our culinary destination has a special attachment to unspoilt nature and simply uses the mentality »Back to nature«.
It is nature that liberates man, relaxes him, offers him a variety of treasures of life. In culinary, however, nature offers local ingredients to extract the best from them and thus conjure up excellent flavors which take the guest to an intense pampering of their taste buds. I have visited many great locations where dishes are prepared by chefs who each add their own creativity in their special way to create unique flavors. Over the years, I ate at many of the finest Slovenian restaurants and I am impressed by how hard they all strive to offer the best of the given moment. Personally, for decades I have also been dedicated to exploring remote places where you can't find famous chefs, but you meet wonderful local people who create simple, yet delicious home-made meals. I like to go to the alpine pastures where authentic food, such as cottage cheese is being made, or I visit mysterious Karst cellars to taste the exceptional Slovenian wines. I like to go to a rural environment, where they cook visually modest, yet »rich« traditional dishes. The modesty and simplicity of the environment inspires me over and over again. Slovenia is a real paradise of remote, hard-to-reach and maybe even a little hidden places, where an authentic culinary experience awaits.
Slovenia is not just about gastronomy. It is a unique environment where you can actively explore beautiful corners, where you can relax and experience the area. Of course, it is possible that by the end of your exploration you will be a little tired, but you will definitely be satisfied. This little country of ours is a great paradise of small specialties. It is not easy to find a place with so many interesting locations worth visiting. In such a small area, you can experience an intense diversity of the environment. As a researcher, you are offered truly beautiful nature with so many excesses. You can get to know the landscape and the people while participating in leisure activities; you go on a walk; explore places by bike; descend into the deep Karst caves; explore lakes and rivers in a canoe… And during all this, you can spice up your experience with delicious cuisine that you will find in many places along the way.
This is the real specialty of our beautiful Slovenia. Taste it and it will awaken extraordinary feelings and give you unforgettable memories.
